My appetite is here and in FULL force. This past weekend, my eating times were strange and I never felt very hungry. I’m glad to report that my appetite is back in action.

I woke up in the middle of the night (4 am to be exact) absolutely STARVING! It was a little distracting but I managed to fall back asleep until 7am. For breakfast I had oats in hopes (rhyme?) that it would hold me over until lunch. Typically it does. But NOO.

A mere 2.5 hours later…Peach Kefir smoothie with half a banana and frozen mango.

AND…half an Cinnamon Raisin Ezekiel English Muffin with a thin layer of PB.

This should hold me over for a late lunch.

Test Update: 1 test down, 3 to go. The next three are next Monday, Tuesday and Wednesday. Let the studying begin. Can’t wait to be done and get back home! Have a great Monday

Sunday Funday

Happy Sunday! It’s absolutely beautiful here in Titletown (Gainesville, Fl; Go Gators!). The high is 62 today and there isn’t a cloud in the sky. I woke up bright and early this morning and got dressed and ready to go to church with my roommate. Breakfast was unfortunately un pictured once assembled but here is what it consisted of:

I spread a thin layer of peanut butter on half of a cinnamon raisin Ezekiel English Muffin. I drizzled a little bit of honey on the yogurt and tah-dah…Breakfast. 

Fage is my favorite brand of Greek Yogurt. I love the 2%; the Total is too rich, and I refuse to eat 0% fat anything =). Many things that are totally fat free have added preservatives and artificial ingredients to make it taste the same. I don’t think the Fage 0% does but life is too short to eat fat-free stuff! That extra flavor boost is worth the added fat.

After church I came home and made a wrap for a quick lunch. It had a little bit of Turkey, broccoli slaw, yellow bell pepper, cucumber and about 1 tbsp each of blue cheese crumbles and honey dijon.

It was rather tasty.

A word on eating meat: I have gone back and forth with vegetarianism in the past year or so and have decided that to have a healthy, balanced died, I need to include a little bit of meat. I eat small amounts of turkey and chicken and rarely red meat (only when it is being served and I have no other choice.) In times when I have gone strictly vegetarian, I tended to rely to heavily on soy products. Don’t get me wrong, I LOVE soy milk and tofu and usually have a little bit of soy milk every day however, too much of it can be harmful. I have been reading that soy can cause increased levels of estrogen that can be harmful and don’t want to mess around with this as a young woman. Also, soy contains goitrogens that can lead to thyroid dysfunction. Another something I don’t want to mess around with! After much deliberation and thought, I have decided to include poultry in my diet to ensure that I am not getting to much soy and still getting enough protein.

Remember those brownies I mentioned from the Christmas party a few nights ago….

My roommate made a batch at a friend’s apartment (no oven here…ahh!) and brought me one last night. I saved it as a dessert for after lunch. It was DIVINE.

My sorority uses styrofoam (as you can see above)…yikes. We have been trying to convince our house mom for a while now to use paper instead. Hopefully we are headed in that direction!

I think this beautiful weather is calling for an outdoor walk. If only there was somewhere to do yoga outside too…I may have to find a spot =) Hope everyone enjoy’s their Sunday!

Lunch-ner

Lunch-ner- noun. 1. A meal served around 4:00pm that is too late to be called lunch, but too early to be called dinner.

It’s amazing how even waking up an hour later than normal can mess with me! That late breakfast really got me too. I was only in the mood for snacks pre-mall time. To ensure I didn’t get to hungry while browsing stores where I shouldn’t be buying things/ admiring puppies that I want to adopt but can’t I had:

Chocolate is my Kryptonite. That…and Coke Zero. I am ashamed to admit this Coke Zero weakness and am working hard to completely eliminate it from my diet. If you had seen the artificial sweetener mess I was before, you would be proud of my progress. I used to LOVE Splenda in EVERYTHING. Oatmeal, coffee, cereal…you name it and I put Splenda on it. I have completely cut out artificial sweeteners except for that DARN Coke Zero. Argh.

The pet adopt-a-thon was a really neat event. I was happy to see that so many dogs were being adopted but it was sad to see them all there since they didn’t have homes. I am a huge dog-lover and have three little puppies at home that I miss.

When I got home I was finally ready for a meal. Enter Lunch-ner:

Spinach salad with broccoli slaw, carrots, cucumbers, yellow bell pepper, tomato and about 1 tbsp of Boar’s Head blue cheese. I topped it with Boathouse Farms Creamy Yogurt Dressing in Honey Dijon.

Smoothie with strawberry kefir(the last of it; I bought the peach flavor today and can’t wait to make a tropical smoothie), a splash of Vanilla soy milk, a tiny piece of banana left over from breakfast, and frozen strawberries and blueberries.

A word on my Magic Bullet. Thanks to the amazing smoothie creations over at Broccoli Hut, I decided to buy a Magic Bullet.  It has been a lifesaver here at school. Since we have no real kitchen, it allows me to make something quick, satisfying and nutritious.

It’s been pretty gloomy/rainy here all day but is the perfect day for that type of weather. Sometimes I enjoy a nice rainy day. Hope everyone is having a great Saturday. It’s my favorite day of the week.
