Hot Lunch

I couldn’t wait to get in the kitchen today. It had been WAY too long! Okay really only 2.5 weeks but it felt like an eternity!
We had some tempeh in the fridge that was waiting to be cooked. I whipped out my Veganomicon cookbook that I got recently and based my meal off of the Smoky Grilled Tempeh. I used most of what they called for but tweaked it a tiny bit with different spices and such.


I was very pleased! I have actually never had tempeh before and I really enjoyed it. The leftovers would be great in a sandwich. I also roasted some brussel sprouts (something else I had never tried) and sweet potato. Obviously, I was craving a hot meal!


On the side I had some fresh raspberries and fage with some granola:img_28091



Oh..and this little surprise was waiting for me on my bed when I got home:


My mom was trying to help them get their product into Publix and she sent us some samples and a t-shirt! Hopefully it will be coming to a store near you soon! I LOVE it!


Well, I’m off to run some errands with mama. Then I am going to flow yoga tonight with one of my favorite teachers! YAY!

It’s 60* and I’m FREEZING!

True sign of a Floridian. I am all bundled up in this “cold” weather. You northerners are probably laughing right now but I just can’t help it! It was in the 30’s this morning! It will be about 50* when I go to my LAST EXAM REVIEW for the WHOLE SEMESTER. THANK HEAVENS!! I am so ready! (Can you tell from my whining the last few days!?)

I had a really productive morning and got most of the things I wanted to do done. I even did two loads of laundry…bonus! (My mom will be happy to know I am not going to be clogging up the washer when I get home…love ya Ma!) Breakfast held me over until noon! It had to be the chocolate =)

I took a 1.5 mile walk before lunch to try to warm up. I got back hungry and had this:


It was an Ezekiel tortilla with spinach, tomato slices and the Mediterranean Chicpea Salad I bought at Mother Earth Market yesterday.  It had garbanzo beans, tomato, feta, scallions parsley and white wine vinegar. I am going to try to replicate it when I am home. I love cold bean salads. They are just so tasty!

I ended up putting the Fage that is in the background back and had a Stonyfield Farm Organic Low-Fat Vanilla Yogurt with blueberries and 1 tbs homemade granola. No picture though. My camera died…even though I charged it just two days ago!

I went for another 1.5 mile walk AFTER lunch to try to warm up AGAIN. It was nice to release some energy since my desk is holding me hostage.

I am in the mood for something HOT for dinner. Not sure what though. I need something to warm me up. Don’t Laugh. I won’t be able to post tonight since I will be at my exam review so enjoy your Saturday evening! 4 MORE DAYS!

Sunday Funday

Happy Sunday! It’s absolutely beautiful here in Titletown (Gainesville, Fl; Go Gators!). The high is 62 today and there isn’t a cloud in the sky. I woke up bright and early this morning and got dressed and ready to go to church with my roommate. Breakfast was unfortunately un pictured once assembled but here is what it consisted of:




I spread a thin layer of peanut butter on half of a cinnamon raisin Ezekiel English Muffin. I drizzled a little bit of honey on the yogurt and tah-dah…Breakfast. 

Fage is my favorite brand of Greek Yogurt. I love the 2%; the Total is too rich, and I refuse to eat 0% fat anything =). Many things that are totally fat free have added preservatives and artificial ingredients to make it taste the same. I don’t think the Fage 0% does but life is too short to eat fat-free stuff! That extra flavor boost is worth the added fat.

After church I came home and made a wrap for a quick lunch. It had a little bit of Turkey, broccoli slaw, yellow bell pepper, cucumber and about 1 tbsp each of blue cheese crumbles and honey dijon.


It was rather tasty.

A word on eating meat: I have gone back and forth with vegetarianism in the past year or so and have decided that to have a healthy, balanced died, I need to include a little bit of meat. I eat small amounts of turkey and chicken and rarely red meat (only when it is being served and I have no other choice.) In times when I have gone strictly vegetarian, I tended to rely to heavily on soy products. Don’t get me wrong, I LOVE soy milk and tofu and usually have a little bit of soy milk every day however, too much of it can be harmful. I have been reading that soy can cause increased levels of estrogen that can be harmful and don’t want to mess around with this as a young woman. Also, soy contains goitrogens that can lead to thyroid dysfunction. Another something I don’t want to mess around with! After much deliberation and thought, I have decided to include poultry in my diet to ensure that I am not getting to much soy and still getting enough protein.

Remember those brownies I mentioned from the Christmas party a few nights ago….


My roommate made a batch at a friend’s apartment (no oven here…ahh!) and brought me one last night. I saved it as a dessert for after lunch. It was DIVINE.

My sorority uses styrofoam (as you can see above)…yikes. We have been trying to convince our house mom for a while now to use paper instead. Hopefully we are headed in that direction!

I think this beautiful weather is calling for an outdoor walk. If only there was somewhere to do yoga outside too…I may have to find a spot =) Hope everyone enjoy’s their Sunday!
