Meet…my crockpot.

This little guy is a lifesaver. I bought this 2-quart wonder a few months ago at Wal-Mart for about $12. I LOVE oatmeal, but I am definitely a texture gal. I love rich, creamy textures and this oatmeal does the trick. Instant oats…no thanks. Stove top…not creamy enough. Crockpot…just right!

I make a 4 serving batch as needed and heat it up in the morning. Sometimes I will make it plain, usually with the intention of doing some type of savory oat combo, although I have yet to try it. This afternoon I made a batch of cinnamon oats. I forgot to take a picture of the final product but have no fear…You will see it tomorrow!

My mom and I discovered this type of oatmeal from a slow cooker cookbook over the summer. It was for apple cinnamon oats. It has chunks of apple, brown sugar, cinnamon, nutmeg, and ground cloves. It cooks on low over night for 8 hours and in the morning….magic. It’s delicious. I insist you try it!

While babysitting, I had a Clif Z-Bar for a snack. I actually prefer these to regular “grown-up” Clif bars.

I got a little exercise while babysitting. The little girl is 18 months old and loves to be outside. We played in the backyard and then I took her for a nice little walk in her stroller.

I was done around 12:30 and was starving! I stopped at Moe’s on my way to run errands. I got a kid’s burrito (Moo Moo Mr.Cow) with black beans, chicken, lettuce, Pico de Gallo and guacamole. I had a little bit of sour cream (there we go with the rich, creamy texture that I can’t resist again) on the side. I like to get it on the side because they always put wayyyyyyy too much.

Sorry..I was a little nervous taking the pic, hence the blurriness. I’m still getting over my shyness. I never eat the chips when I go there. I can resist chips and salty snacks all day long but you put something sweet in front of me and it’s over!

The rest of the day was spent studying at my desk. I had an apple around 4:00pm and ate an Annie’s California Veggie Burger (the only veggie burger I can find that is soy free) and some steamed green beans for dinner around 6:00.  An hour or so later I had an Oiko’s Greek yogurt. I bought it today to try even though it was fat free. I stand strong about not eating fat free things after this experience. I didn’t really enjoy it but didn’t want to waste it. Oh well…lesson learned!

Well…back to studying for me! Hope everyone had a Happy Tuesday. Last day of classes tomorrow…can’t wait!
