M-I-C-K-E-Y M-O-U-S-E

Just finished packin’ some snacks for the trip tomorrow. At 7:45 am, 110 of us will be loading buses to make the 2 hour trek to Orlando to visit the Magic Kingdom. I am BEYOND exciting and can’t believe that we have such an amazing opportunity! My friend C and I have been chatting all day about our excitement. We have decided to be “paparazzi” for the day and will be documenting every moment in pictures.

This afternoon I went for another 3.5 mile walk. I had been sitting at my desk all day doing problems on Capital Budgeting. I really find this stuff interesting but can’t stand sitting at a desk for so long! I felt as though my bum was an extension of my chair. Can you say YIKES!? A walk was definitely in order.

I kept dinner light with a mish-mosh salad. A little bit of everything went into it. One benefit of having food provided during the week is the full salad bar daily. I have become a bit of a food snob lately and won’t eat things if I think to hard on where they came from. I try to buy as much organic as possible but sometimes my budget doesn’t allow and the salad bar just has to do!

It hit the spot! I drizzled it with some Boathouse Farms Honey Dijon Yogurt Dressing. This stuff is really good. I love creamy dressings (there’s that texture again) and this one is pretty light. 45 calories for two tablespoons and the ingredients aren’t too bad. I have made my own yogurt salad dressing before and especially love to make my own vinaigrettes when I am at home but this does the job at school.

For tomorrow I have packed a peanut butter and banana “sammie” on an Ezekiel tortilla and a couple of Clif Z-bars. My friend C is also a health-foodie like myself and is packing some snacks as well. We have been discussing options and felt that peanut butter and banana was a safe bet since it wouldn’t spoil too quickly (like the hummus wrap I REALLY want to take).  We figured we could save a few bucks and feel good at the same time. We also decided we might supplement with a salad at the park (that will probably cost $12!!!) and will definitely be treating ourselves to a Mickey Mouse ice cream bar!

I also packed an umbrella since it is forecasted to rain. It’s okay though…it will be fun either way.

And one more thing…

Thanks to all of you who have been leaving comments and have been so kind in my first few days as a blogger. I was unsure at first about this whole thing but am excited to see what the future brings!

Well I’m off to watch Home Alone and do some restorative yoga poses =)

Dinner Cometh Early

I just love the weekend. I need to get in gear though to finish out the semester strong. Wednesday is the last day of class and exams are the following week. I can’t believe it is pushed so far back this year! Last year I was home for a full calendar month over the holidays. Oh well…I just need to take it one day at a time.

This afternoon I went for a 3.5 mile walk around campus with a friend who lives in the sorority house as well (That is one of the positive sides…always people around!). I have a BIG loop that goes around the whole school that I have been walking since my Freshman year. I didn’t want to get hungry in the middle so I had an apple beforehand. Pretty, huh?

I was pretty hungry when I got back. I decided to shower to hold dinner off a little longer but couldn’t wait any longer once 5:30 rolled around.

I had an Ezekiel English Muffin with egg whites (cooked in the micro; not the best way but you gotta do what you gotta do) and a slice of cheddar cheese (are you noticing that I LOVE cheese), and a salad of broccoli slaw, carrots, cucumbers, yellow bell pepers and tomatoes with a little Sesame Goddess Dressing from Whole Foods.

You may see quite a few repeats over here at Eat The Whole Thing. When I buy a certain veggie or salad component, it has to show up a lot so it doesn’t go to waste!

I had a little dessert right after to cure my sweet tooth. Vanilla yogurt (maybe 1/4 cup) with homemade granola and pumpkin butter. Can you say YUM?

Lunch-ner

Lunch-ner- noun. 1. A meal served around 4:00pm that is too late to be called lunch, but too early to be called dinner.

It’s amazing how even waking up an hour later than normal can mess with me! That late breakfast really got me too. I was only in the mood for snacks pre-mall time. To ensure I didn’t get to hungry while browsing stores where I shouldn’t be buying things/ admiring puppies that I want to adopt but can’t I had:

Chocolate is my Kryptonite. That…and Coke Zero. I am ashamed to admit this Coke Zero weakness and am working hard to completely eliminate it from my diet. If you had seen the artificial sweetener mess I was before, you would be proud of my progress. I used to LOVE Splenda in EVERYTHING. Oatmeal, coffee, cereal…you name it and I put Splenda on it. I have completely cut out artificial sweeteners except for that DARN Coke Zero. Argh.

The pet adopt-a-thon was a really neat event. I was happy to see that so many dogs were being adopted but it was sad to see them all there since they didn’t have homes. I am a huge dog-lover and have three little puppies at home that I miss.

When I got home I was finally ready for a meal. Enter Lunch-ner:

Spinach salad with broccoli slaw, carrots, cucumbers, yellow bell pepper, tomato and about 1 tbsp of Boar’s Head blue cheese. I topped it with Boathouse Farms Creamy Yogurt Dressing in Honey Dijon.

Smoothie with strawberry kefir(the last of it; I bought the peach flavor today and can’t wait to make a tropical smoothie), a splash of Vanilla soy milk, a tiny piece of banana left over from breakfast, and frozen strawberries and blueberries.

A word on my Magic Bullet. Thanks to the amazing smoothie creations over at Broccoli Hut, I decided to buy a Magic Bullet.  It has been a lifesaver here at school. Since we have no real kitchen, it allows me to make something quick, satisfying and nutritious.

It’s been pretty gloomy/rainy here all day but is the perfect day for that type of weather. Sometimes I enjoy a nice rainy day. Hope everyone is having a great Saturday. It’s my favorite day of the week.
